Karen Fowler shares a favorite recipe with us. Karen’s co-worker Missy, first shared the recipe with Karen and she now enjoys making this for family and friends.
I am not sure that I have ever had peanut butter frosting before, but this takes the cake,…literally!!! It is creamy, rich and delicious!
Missy’s Chocolate Cake with Peanut Butter Frosting
2 cups flour
2 cups sugar
3/4 cup cocoa
2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1 cup oil
1 cup hot water
1 cup cold water
2 eggs
2 tsp. vanilla
1 cup semi-sweet mini chocolate chips (optional)
Preheat oven to 350. Mix dry ingredients together. Add eggs, oil, and vanilla to dry ingredients and stir. Add hot water and stir. Add cold water and stir. Pour into a greased and floured 13 x 9 pan. At this point I always sprinkle some chocolate chips on the top of the batter (which will sink to the bottom), they make it a bit more chocolaty and very yummy :-} Bake approx. 30-35 minutes or until a knife inserted in the center, comes out clean.
Peanut Butter Frosting
1/2 cup butter, softened
1 cup creamy peanut butter
3 Tbs. milk, or as needed
2 cups confectioner’s sugar
Cream the butter and peanut butter together using an electric mixer. Gradually mix in the sugar..As it starts to become thick add milk, 1 Tbs. at a time. Beat until fluffy. Spread frosting onto cooled cake.
