Gary and I had a great trip to Hampstead North Carolina to visit with our niece and nephew and their family. We had the chance to walk along the Atlantic Ocean and marvel in the beauty of God's creation. At the same time people in Pennsylvania were experiencing a few inches of snow. Not sure of which you prefer but both are beautiful sites to see.
So while there I had the chance to try new foods. This is a recipe for Mexican Lasagne.
It makes 6 servings.
1/4 cup each chopped onion and green pepper
2 cups canned chopped tomatoes
1 pkg taco seasoning
16 ounce cottage cheese
1 1/2 cup shredded cheddar cheese (divided)
2 eggs
6 6-inch tortilla
Garnish: Shredded lettuce and chopped tomatoes
In a large skillet brown turkey with onion and pepper. Add canned tomatoes and taco seasoning. Simmer uncovered for 5 minutes.
In a bowl combine cottage cheese, 1 cup of cheddar cheese and 2 eggs
Place 3 tortillas on bottom of greased 8 by 12 baking dish. Spoon meat on top of tortilla Top with other 3 tortillas. Then spoon on top evenly the cheese mixture.
Bake covered @ 350 for 45 minutes Uncover and sprinkle rest of cheddar cheese and bake 5 more minutes. Garnish with lettuce and tomatoes. Enjoy.
Cindy is married to Gary and have two married children and five grandchildren. Both Cindy and her husband were teachers and this past year Cindy taught Home Economics at the church’s Christian school.
