I thought I would share some recipes I’ve tried out recently. I’ll include the link (just click on the name) as well as any adaptations I made to the recipe. As a disclaimer, I’m only endorsing the recipes.
Spicy Buffalo White Bean Hummus
*I didn’t have any Great Northern Beans, so I substituted that with a bean called “Job’s Tears.” This wasn’t the best substitution as “Job’s Tears” beans are extremely glutinous, but by adding water and olive oil I was able to get the hummus to a good consistency and it tasted great!
Yogurt
*This is my favorite way to make yogurt!
Homemade Cinnamon Bread
*This recipe flopped for me; I think I killed the yeast. But when it came fresh out of the oven, it tasted like something from Cinnabon so I don’t suppose that’s a flop after all!
Eggplant Parmesan
*I made two changes to this recipe. First of all, I only breaded one side of the eggplant slice and then I baked the slices in the oven for about 15 minutes instead of cooking them in a skillet.
Egg Roll in a Bowl
*We jokingly said the only thing that was missing was the crispy wrapper. Definitely use all the cabbage recommended in the recipe, and go easy on the red pepper flakes.
Steak Bites
*I made this twice, and we found we preferred marinating a whole steak compared to the bites. With the bites the marinade seemed a tad too salty.
Cheesesteaks
*What a taste of Pennsylvania!
Sauerkraut
*The craving for a pork-and-sauerkraut meal was too much, so I decided to see how hard it would be to make my own sauerkraut. This turned out to be extremely easy. One rainy family day I decided to put the pork and sauerkraut in the crockpot and we enjoyed the smells all afternoon – and the dinner too!
