8 cups oatmeal
1 1/2 cup wheat germ(I use steel cut oats)
1 cup chopped walnuts
1 cup sunflower seeds
1 cup chopped almonds
1 cup chopped pecans
1/2 cup coconut (add last 10 minutes)
You may also add dried cranberries or chocolate chips after baking
Mix all dry ingredients in a large bowl.
Then mix the following in a pot,
and boil 1 minute over medium heat.
1/2 cup brown sugar
1/4 cup maple syrup
3/4 cup honey
1 cup coconut oil
1 tsp. Cinnamon
1 tsp. Vanilla
Then pour over the dry Ingredients. Stir to coat. Spread mixture evenly over parchment lined sheet (this makes a lot and could be divided on two sheets).
Bake @ 200-325 until crispy and toasted lightly. Bake about 20 minutes, this depends on your oven. Stir mixture halfway through baking time. Add the coconut at this time
Watch carefully the first time you make this recipe. This can burn easily. At end of baking time, cool then you can add dried cranberries or chocolate chips.
This is a great recipe to make and share with someone.
It is great as a cereal or can be used to make a parfait using yogurt and fruit. Also you can add and omit ingredients. For example, I don’t always have maple syrup, so I just add the amount needed to the honey.
Cindy is married to Gary and have two married children and five grandchildren. Both Cindy and her husband were teachers and this past year Cindy taught Home Economics at the church’s Christian school.
