Feta cheese is unexpectedly popular in South Africa. All the grocery stores carry it. Most carry multiple flavors! Even some fast food restaurants serve a Greek salad – with feta of course. While this simple, colorful salad isn’t a South African recipe, it could be. It is one my family requests often – even the kids.
Green Bean Salad
1/2 C olive oil
1/4 C vinegar
1 clove garlic
1/2 tsp salt
1/4 tsp pepper
2 lbs green beans (I snap into pieces)
1 red onion (sliced)
4 oz feta cheese, crumbled
Steam beans 8 minutes. Plunge into cold water. Combine beans, onion, and cheese in bowl. Pour dressing over. Cover and chill 1 hour.
